“The wine is made in the vineyards. We are just taking care of it, while it is in our cellar.”
The goal is by using traditional winemaking techniques to manifest the uniqueness of the vineyard, its terroir and to make wines, which carry the elegancy and refinement of “ The Old World” and to find the pure balance between the fruit, acidity, oak and the tannins. 
In their cellar, the key to the creation of good wine is passion.

The main role for the imposition of their cellar as a market leader plays the teamwork of the professionals, who altogether discuss and plan the operations, which are to be conducted to the vineyards at any stage of the production process. 
There are three technologists; apart from them, there is an agronomical team. All of them have professional experience and specializations abroad. Moreover, the cellar has an established practice for exchange with French experts, which continuously increases the skills of the local professionals and respectively leads to positive results from a production viewpoint.

The Katarzyna Estate wines are produced through classical methods with predominant manual labour, when this is significant for the quality. During the vine harvest, on a daily basis, through laboratory analysis and tasting the sugar contents are monitored as well as the titric acids and the phenol maturity of the grapes in the various plots. Precise diaries of the results are being kept in order to accumulate the data, which will consequently allow to assess the real potential of the terroir.
The wines age in French barriques (40% new ones) and are regularly filled up. The quality changes occurring due to the interaction of the liquid with the oak wood are strictly monitored. We are experimenting with different types of oak trees from various regions and woods are roasted in different manners.

After bottling, the wines mature in bottles in an underground tunnel with constant temperature of 14 C and 75% humidity.
